Like a sore thumb...

Hyrum drove me to school today, which means he also came to pick me up.

On the way home he leans over to me and says "did you put up new fence panels at our backyard while I was gone?"

I look at him all confused and have no idea what he is talking about. So I say "What are you talking about?"

He says "Well I went outside to fix the fence panels like you asked me to*side note see below* and two of them had been torn down and replaced."

So we drive home and go around the block. Finally our house comes into view. And instead of seeing our same old boring fence.... I see an even uglier sight.

While Hyrum had been asleep this morning after taking me to school at 5:30 am, one of our neighbors came over and took it down and replaced it with out our knowledge.

Now look... I get the whole nice neighborly thing and trust me I back my fair share of goodies for them. But when it comes to our house ( which we RENT ) repairs are not our neighbors business.

So now instead of a uniform fence that my husband could have easily fixed, we have a mismatched retarded fence. I know that when our landlords drive by... which they often do... they are going to be pretty damn pissed.

And as for me... well as you can tell... Im more than a little pissed. Im having a little bit of a hard time not marching right over to ELIZABETHS house and saying " LOOK!! You cannot just....etc etc"

* Hyrum had been out of town again and the fence panels had loosened. This is not good considering Lily stays outside when I go to school. So I asked him to fix them as soon as he got back into town and had a day off....that day being Tuesday....today!

Definately not me...

... I did not decide to go au natural this weekend and not wear any makeup or do my hair.

... I definately did not bribe my husband to go to the store with promises of baking and then realize that it was far too late to bake.

... I did not borrow my girlfriends sweater and almost decide to not give it back!

... I did not wait all weekend to do the dishes and let them pile up in the kitchen.

... I do not read Perez Hilton like 4 times a day.

Another Blog So Soon???



So this is my second blog today, I put up a million pictures of my class today and my practical project. So why am I blogging AGAIN?



Hy came home tonight!!



And he brought me Lilies- which are all my all time favorite thing in the world- I mean we have a dog named Lily!



He brought me a dozen of a gorgeous orange color and a dozen in a blood red color... so sweet.





Mousse Cake Pracitical Friday

Today was the LAST day of CUSTARD!! THANK YOU! I have never been so sick of cream and egg yolks in my entire life. Plus I no longer have Chef Anjali- a miracle. And even more of a miracle was that I got an A on my project!
The guidlines were pretty basic- atleast 2" mousse cake with one sponge, atleast one type of mousse, one glacage, and one other decorative design. In 3 hours- which may seem like a long time. But when you are working with gelatin, its pretty risky. I got all of my components made in the first hour and it took the other 2 hours just to set up entirely!
I only had 1 point taken off of my whole practical and it was worth 200 points!!
Next week I start cakes ( YAAAY!) with Chef Erica ( FINALLY!). She is definately my favorite chef.
So I made a Black Currant Mousse with Vanilla Sponge Cake and a Passion Fruit and Black Currant Glacage with tempered chocolate as a garnish.





Sarah Beth was having a cocktail after getting an A on her practical too......

David freaked out about his project but it went really well......
Mila celebrated by making some ice cream....

I tempered some chocolate, did some filigree, and dipped some candied orange slices....
Jamie made some Cake components....
and me... well as you can see... I nearly freaked out in front of the sugar show pieces!! All together a great practical.

But it was such a LOVELY phrase...



Hy is going out town ( yes again...) for work on Monday. This time he is only going to Seattle, which is like 3 hours away. But hes not coming home until Friday night. Pretty lame right?!

Totally miss him too much when he is gone out of town. Hopefuly this will be the last time for a while and he wont be forced to push the days back again!

I hardly sleep when he is gone and by the time he gets home I am too exhausted to even think straight! The bed feels uneven and even having the puppy sleep on the bed with me doesnt feel the same. I get cold- hy always keeps the bed nice and warm! Another 5 days of nothing but school and my thoughts.



So I will say goodbye to him Monday morning when I head to school VERY EARLY... like always. Half an hour after that he will take his suitcase and his big truck and head off into the sunrise with his crew. And I will come home to an empty house with no one to wait for.

Where I will sit and feel like #2, even though I know he really cares and loves me and to him I am #1. But loneliness will tell you differently...

Ohhh Lady Fingers

Today was pretty basic in class today. Although we worked with leaf gelatin, which we normally dont. Interesting. Made basic sponge roll, 2 sheet pans; lady fingers, and more sponge products; and some orange blossom panicotta. Spent most of my 5 hour class today in a lectur, 3 1/2 hours worth. Tuesday and Wednesday are going to be the same as well. Going to need some strong coffee to get through lectures about viscosity and sublimation at 7 am.

Didnt go camping this weekend, Hy ended up going to do a side job for an old friend.

Saturday we went out to breakfast at Sheri's in Vancouver. I usually feel so-so about their food but today was worse than usual. I tried to order the eggs benedict that doesnt have an english muffin, or bread type, but instead is substituted with corned beef hash. Which in theory- sounds pretty freaking awesome. But then again my eggs were over easy instead of poached and everything was a bit too crunchy- im talking underdone potatoes, underwripe fruit, the whole nine yards. Needless to say we will be going back to our usual weekend breakfast diner. Located on 164th; it is a moment frozen in time........hash there is to die for.

We then went to see Tropic Thunder a movie by Ben Stiller. My expectations were great- and were not met. When even your husband who loves funny, gruesome, strange movies like you do thinks its crap- well then..... we almost walked out. But then why waste the money even more. Few rare moments that were there.....but not many.

After this we went to the river for a nice picnic and to go hang out on the beach with Lily. As you can tell, the river is not little- the shot below is of my grandma Bonnie, my husband, and I all down at the river. We are standing on the Washington side and the other side of the river is Oregon. Freaking huge river that leads to the ocean which we have camped along.




Sunday, Hy worked and I cleaned the house and made some southern fair for dinner- deep south fried chicken and mashed sweet potatos. Delish. Totally worth the effort. For dessert I made some coconut macaroons and substituted 1/4 of the coconut with roughly chopped pecans. Help the base together more and it was a great little crunchy mouth feel.

Im tired and not sure if I feel like going to school tomorrow--- yeah I know I know.

Working on my Thanksgiving recipes considering I am cooking for like 70 people. Going to have to dig into my brain and pull out some of that deeply hidden propaganda that they teach me! I kid I kid.

Which brings me to my nephew. He turns 3 on October 2 and I miss his sweet face. Anyway his Aunt Kenzi, being me, is studying to be a chef. So what better birthday present? I got him a small black chef coat that is being stitched with his name on the front in white. I am going home to make that huge meal for everyone on Thankgiving and well.......I need a sous-chef. So who better than the most gorgeous 3 year old Ive ever met!





Now obviously the kid in the picture below is not my nephew! He is the kid in the chef coat that I bought for my nephew off of their fun website. Imagine a small name stitched in white above the left breast pocket.



Also I am taking him shopping. WHy? Because I never get to see him and I want to make the most of our time together, before he forgets that I love him and am is friend. Like I did with all of my aunts and uncles. I want to be more present than mine were, I want him to remember that I care about him and he can come to me anytime.

Which reminds me, he is having a little surgery in the middle of next month for a little "ball dropping" issue. Poor sweetheart. Things good thoughts for him and I will let you know when it happens.

A few updates

So I did really well on my first of 3 custard practicals. I rocked it! I made some amazing creme brulee and Paris Brest. I got a 95/100. SWEET.

Hyrum and I are now sponsering an underpriveledged little girl in India, we get letters and pictures and as soon as I get one- I will let you know. Im really excited and feel so happy that I can do this for someone else.
We are probably NOT going camping this weekend- we are both far too tired and too busy.
Rachel wants Hy and I to go with her and Nick down to the Gorge tomorrow, so we probably will do that instead!

4- What does he do that surprises you? He suprises me with how wonderful and caring he is. He works hard, he cookes for me ( someone cooking for me??!! WHAT! I know.), and he is the kindest person I have ever met.

Practical Fridays

I dread Fridays at school now because I have a written test and a practical test.



This week my practical is on Brioche. I am making Brioche Nanterre and a Tete. Also using phyllo we have to make Spanikopita with a sweet filling and plate them will creme anglais and fruit coulis. All in 3 hours. Super. Not really dredding the process, the only part I dont enjoy is the judging. You sit one on one in front of your chef and your creations and you are told everything flawed about your work. For about 20 minutes. Have you ever seen Challenges on Food Network or Hells Kitchen? The critiquing is pretty much the same, including the part where all of your peers get to hear your flaws. Except you know your judge and have to spend everyday with her, so dissapointment is rampant. JOY.



Tomorrow is my last day of Viennoiserie and moves me forward to one less day with my current chef, who is undeniably tough. Monday I begin again- this time moving forward to Custards. Pana Cotta- Creme Brule, Creme Caramel, all of those lovely treats. More my style, although same chef. I cant wait to go back to Chef Erica. As far as teaching and more, she has made me feel important and like I am actually good at what I do. Its nice to have SOME validation.

Labor Day

Hyrum and I did a whole lot of nothing! We watched murder mysteries that involved identical triplets as a twist, and went for frozen yogurt. Mine was called a "Razzle-Dazzle" as I am partial to all things of a razzle-E-dazzle-E nature.

What else........I showered, he napped, and I made chicken soup. Cooked it for 4 hours, let it get a nice flavor (box choy leaf and stem, chicken, baby carrots, jalepenos, and garlic) and it was heaven in a bowl. ALso made a phyllo type pocket with cream cheese, spinach, and white pepper jack cheese. YUM.

School tomorrow. I hope this week will be much better than the last. Hopefuly my practical will go MUCH better, Id rather not say- too soon. And after this class I will have move on to "Custards". I.E. Pies, Pana Cotta, Creme Brulee, Creme Caramel...options are endless. 4 more weeks of Chef Anjali...
